C Is for Cookie

By Don Orwell

If there is one thing we all look forward to during the holidays, it's indulging in sweet goodies. Parents, though, may not be so thrilled with how much sugar their children are consuming. These easy-to-make, nutritious cookies will please kids' taste buds without the sugar rush.

Apple Spice Cookies

  • 1 cup unsweetened almond butter
  • 1/2 cup raw honey
  • 1 egg & 1/2 teaspoon salt
  • 1 apple, diced
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1 teaspoon fresh ginger, grated

Instructions

Heat oven to 350°F. Combine almond butter, raw honey, egg, and salt in a bowl. Add apple, spices, and ginger and stir. Spoon batter onto a baking sheet 1 inch apart. Bake until set. Remove cookies and allow to cool on a cooling rack.

Superfoods No-Bake Cookies

  • 1/2 cup coconut oil
  • 1/2 cup cocoa powder
  • 2 cups finely shredded coconut
  • 1 cup large flake coconut
  • 1/2 cup raw honey
  • 2 teaspoons of ground vanilla bean
  • 1/2 cup chopped almonds or chia seeds (optional)
  • 1/2 cup almond butter (optional)

Instructions
